1 cup green onion, chopped
1 cup red bell pepper, chopped
1 jalapeno, diced
7 cups chicken or vegetable stock
3 Tbs. cornstarch
6 cups potato, diced
1 tsp salt (to taste)
¼ tsp. white ground pepper
olive oil
1-2 cups shredded Cheddar cheese

Directions:

1. Coat large stock pot with olive oil and place over medium-high heat until hot. Add green onion, red pepper, and jalapeno, sauteing until tender.

2. Combine cornstarch and ¼ cup water; stir until smooth and set aside. Add chicken stock to pan, then add cornstarch mixture. Stir in potatoes, salt and white pepper. Bring to a boil; reduce heat and simmer uncovered for 10 minutes, stirring constantly. Cook an additional 15 minutes siring occasionally. Add cheese in batches, stirring until smooth.
