Creamy Tomato Soup Recipe

4 ripe tomatoes, skins and seeds removed
1 stick celery
1 shallot
1 potato
2 carrots
1 medium butternut squash
1 qt. organic tomato juice
1 tsp. parsley
1 tsp. basil
1 tsp. oregano
2 tsp. tamari or soy sauce
roasted red pepper (optional)
1 c. cream (dairy or cashew)
2 cloves garlic
½ c. Reggiano cheese

In a large pot, cook all the vegetables in tomato juice. When tender, add herbs. Let cool. When cooled, add cream and Reggiano cheese. Purée in Vitamix.
Serve with grilled cheese, crusty bread or crackers.
