8 eggs (egg beaters or egg whites)
6 oz. fat free cottage cheese (plain or with chives)
½ c. cheese (I find Fontina, cheddar, feta, or goat cheese works really well; you can also combine several different cheeses).
Almost any vegetable can be used.
fresh or frozen spinach, cooked and drained
shredded yellow squash or zucchini (use towel to squeeze out extra liquid)
tomatoes
asparagus
broccoli

Directions:

Put all ingredients in a bowl and pour mixture into a 9" x 13" baking dish sprayed with olive oil.
Bake at 375º for 50 minutes.
