2 c. quinoa
4 c. water
pepper (orange, yellow, or red), diced
½ red onion, diced
½ cup cashews
½ cup dried cranberries

Vinaigrette:
⅓ c. extra virgin olive oil
⅛ c. champagne vinegar
2 lemons, zested and juiced
1 orange, zested and juiced
1 Tbsp. of orange marmalade (optional)
2 Tbsp. minced thyme
1 Tbsp. minced mint

Directions:
Directions:
Boil 4 c. of water and add 2 c. of quinoa. Reduce and simmer until the water is gone. Fluff with fork and place in a large flat dish to cool. Add cranberries, cashews, onion, and pepper. Pour vinaigrette over rice mixture. Salt and pepper to taste.
