3 cups flour
3 eggs
2 cups sugar
1 cup oil
1 tsp vanilla
1/4 tsp baking powder
1 tsp baking soda
1/2 cup sour cream
2 cups grated zucchini
1 cup chopped nuts, raisins or chocolate chips
1 tsp cinnamon
1 tsp salt
1/2 cup sour cream

Directions:

Preheat oven to 350º

Sift flour, beat eggs and add with rest of ingredients to flour in bowl. Mix well, making sure zucchini and flour is mixed into batter. Scrape bowl often and keep mixing for several minutes.

Bake one hour and twenty minutes in 2 9x5x3 loaf pans.
