2 boneless skinless chicken breasts cut into strips
2 Tablespoons olive oil
1 clove garlic minced
1/2 teaspoon ginger
5 cups low sodium chicken broth
1 lb. carrots peeled & cut in diagonal slices
4 scallions cut on diagonal
save a few for garnish
1 head baby bok choy cut on diagonal (8-10 stalks)
1/4 lb. angel hair pasta broken into fourths (optional)
2 tablespoons lemon juice

Directions:
Directions:
Heat oil in a large pot until hot.
Add chicken, and garlic -cook and stir 4-5 minutes until chicken is no longer pink.
Add the ginger, broth, carrots, bok choy,scallions and bring to a boil.
Reduce heat and simmer for 10 minutes
Add the pasta & simmer for 6-8 minutes
Remove from heat, stir in lemon juice garnish with scallions and serve.
