2 1/3 C flour
1/3 C sugar
1 C molasses
3/4 C hot water
1/2 C shortening
1 egg
1 tsp. baking soda
2 tsp. ground ginger
1 tsp. cinnamon
3/4 tsp. salt

Directions:
Directions:
Beat all of the ingredients on medium speed, scraping the bowl occasionally, until well blended. Pour into a greased 9 x 9 baking dish. Bake at 325º for ~50 minutes or until a wooden pick comes out clean. If you want a spicier cake, try adding 1/4 t. nutmeg, 1/4 t. allspice, 1/4 t. ground cloves, 1/4 t. black pepper

I personally think gingerbread is one of the coziest things to smell baking...especially in the fall! Serve with fresh whipped cream and grated nutmeg.
