4 cups red cabbage finely sliced
1 cup celery, finely chopped

DRESSING

3 oz. Roquefort or 6 oz Blue cheese
1/2 cup tarragon vinegar
3/4 cup olive oil
1 tsp Wocestershire sauce

Directions:
Directions:
Mix together finely sliced cabbage and celery in a salad bowl.

For dressing, crumble cheese, add a little oil and beat until smooth. Add vinegar and rest of oil slowly. Add remaining dressing ingredients. Mix well. Pour over salad.
