6 small zucchini (about 1-1/4 lbs), thinly sliced
1/2 cup chopped green pepper
1/2 cup chopped red pepper
1/2 cup chopped celery
1/2 cup thinly sliced onion

DRESSING

2/3 cup cider vinegar
1/3 cup olive oil
1/2 cup sugar
3 T white wine vinegar
Salt and pepper to taste

Directions:
Directions:
Combine vegetables and set aside.

DRESSING

Mix dressing ingredients well (be sure sugar is dissolved). Pour over veggies. Toss gently. Cover. Chill at least 8 hours or over night.
