1 egg
1 cup milk
1/4 cup salad oil
1 cup finely chopped apples
2 cups flour
1/4 cup sugar
3 tsp. baking powder
1 tsp. salt
1/2 tsp. cinnamon
Nut crunch topping
1/3 cup brown sugar
1/3 cup chopped nuts
1/2 tsp. cinnamon

Preheat oven to 400º
Beat egg. Stir in milk, oil, and apples. Mix in the remainder of ingredients except the topping. Fill muffin tins 3/4 full. Spoon the topping mix on top of the batter on each muffin.

Bake for 15-17 minutes.

I use chopped pecans in the topping mix. I also leave the apples in chunks. Theses muffins are my moms recipe.
