½ + ⅛ cup canola oil
½ can (7.5 oz.) solid-pack pumpkin
1 cup all-purpose flour
1 cup sugar
1 package (3 oz.) cook-and-serve vanilla pudding mix
½ tsp. baking soda
½ tsp. ground cinnamon
¼ tsp. salt

Preheat oven to 325º F.
In a large bowl, beat eggs.
Add oil & pumpkin; beat until smooth.
Combine remaining ingredients; gradually beat into pumpkin mixture.
Pour batter into a greased 8x4x2 loaf pan.
Bake 75-80 min. or until a toothpick inserted near the center comes out clean.
Cool for 10 min. before removing from pan to wire rack to cool completely.

Freeze option: Securely wrap & freeze cooled loaf in plastic wrap and foil. To use, thaw at room temperature.
