1 pound small curd cottage cheese
1/2 pound grated Swiss cheese
1/2 pound mild cheddar cheese
4 eggs, beaten (large or extra large)
1/2 cup flour (instant flour mixes better)
1/2 cup half and half or whole milk
1 stick butter, melted
10 oz pkg frozen spinach, thawed, drained and pressed
1tsp baking powder
dash of salt and pepper

Directions:

Preheat oven to 350º

Put all ingredients in large bowl and mix well
Spread into a greased 9 x 13 glass pan

At this point you can seal with plastic wrap and chill to bake later if wished.

Bake for 1 hour.

You can add drained mushroom pieces, or substitute crab, ham, bacon, frozen broccoli, sausage or shrimp if you wish instead of spinach.

This is such an easy recipe, because of no crust.
