1 12-ounce bag of frozen yellow corn, defrosted and drained
2 medium-sized jalapenos, seeded and chopped
1/3 cup red onion, finely chopped
3/4 cup fresh cilantro, chopped
2 limes, juiced
1/2 teaspoon salt
1/2 teaspoon pepper

Directions:
Directions:
Combine all ingredients in a bow, and mix well. Adjust seasonings if necessary. Chill, and serve with Shredded Barbacoa or tortilla chips.
