3 lbs Chicken Breast (cut into cutlets)
2 cans whole peeled tomatoes in juice
1 large onion
Kalamato olives pitted
Olive oil
Egg
Bread crumbs
Whole mozzarella
Fresh basil
Crushed red pepper

Directions:
Directions:
Heat oven to 350║.

Bread egg washed cutlets and brown in olive oil. Pat dry and place in glass baking pan.
In large bowl hand crush whole tomatoes. SautÚ diced onions in olive oil in sauce pan. Add olives and crushed tomatoes. Heat and season as desired.

Pour tomatoes over breaded chicken and garnish with mozzarella medallions and basil. Bake until cheese is browned and bubbled.

Serve with your favorite pasta and salad.
