1/4 c. butter or oil
1 small onion, chopped
11/2 c. shredded cheddar cheese
12 oz. sliced mushrooms
1 6 oz. can olives
12 eggs, scrambled
1/2 c. milk
1/2 tsp. salt and pepper

Directions:
Directions:
Preheat oven to 400º and grease a 9 x 13 pan. Melt butter/oil and saute onion. Spread cheese on bottom of pan. Layer mushrooms, olives, and onion. In a bowl, scramble eggs with milk and season with salt and pepper. Pour egg batter on top of everything in pan but DO NOT STIR! Bake uncovered for 30 minutes or until no longer runny in center. Allow to cool and cut into squares.
