2 each 9' Crusts
36+ Ritz Crackers, coarsely broken(1 cup)
2 cups sugar
1 cup water
2 Tbsp. Lemon Juice
tsp. Cinnamon
2 Tbsp. Margarine
2 tsp. cream of tartar
Grated Peel of Lemon

Directions:
Directions:
Preheat oven to 425. In bottom crust place the crackers. Mix sugar and cream of tartar in a sauce pan. Gradually stir in 1 cup water until well blended. Bring to boil. Reduce heart to simmer, Summer 15 mins. Add Lemon Peel and Juice. Cool. Pour syrup over crackers. Dot with margarine. Sprinkle with cinnamon.

Put on top crust. Trim, seal and flute edges. Slit Top Crust to let out steam. Bake 30 to 35 mins or until crust is golden. Cool.
