1/4 cp butter
1/2 med onion, chopped
1/4 cp flour
2 cps half and half cream
2 cps chicken broth
1 good sized broccoli top, chopped - 1/2 lb
1 cp carrot, julienned
1/4 tsp nutmeg
8 oz shredded cheddar
salt and pepper

Melt the butter and saute the onion 1 min. Add the flour and cook over med heat about 3-5 min. Stir constantly and add the half and half. Add the chicken broth and simmer about 20 min.

Add the broccoli and carrots with some salt and pepper to taste. Cook over low heat 20-25 min. It can be pureed at this point if you want. Add the cheese, and the nutmeg. Heat, stirring frequently until the cheese is melted and well blended into the soup.

If this seems a little to thick you may want to add a little bit of milk. Not to much tho.

Serve with a nice crusty bread.
