1 1/2 pounds ground beef or turkey
1/2 large onion chopped
1 1/2 tsp salt
1 tsp pepper
1/3 package "oven ready" lasagna noodles
1 jar pasta sauce
1 500 ml container cottage cheese
1/2 cup spinach
2-2 1/2 cups shredded mozzarella and cheddar cheese
1/2 cup parmesan cheese

Brown and crumble meat with chopped onions. Mix in salt and pepper. Pour in jar of sauce. Place about 1 1/2 cups sauce in bottom of 9X13 greased pan. Put in oven ready noodles in a single layer, breaking pieces to fit. Put about half meat sauce over top and cover with another layer of noodles. Spread cottage cheese over noodles. Place spinach in a layer over top if desired. Sprinkle with half the parmesan cheese. Place another layer of noodles over top. Top noodles with remaining sauce. Cover with shredded cheese and remaining parmesan. Sprinkle top with salt and pepper. Spray piece of tin foil with Pam and place over dish. Bake at 375 degree oven for about 30 minutes, then remove tin foil and cook for about 15 minutes longer. Remove from oven to cool for about 5-10 minutes. Enjoy!
