2 pounds potatoes (about 6)
1 cup shredded cheddar cheese
2 tbsp corn starch
1 - 2 tsp salt
1 tsp pepper
oil for greasing pan

Directions:
Directions:
Preheat oven to 400 degrees F. Bake potatoes for about an hour until fork goes in easy. (Or microwave)
Place potatoes in ice water until cool, (or cook ahead and refrigerate). Peel potatoes and shred on large holes of grater. Add to a large bowl and use a fork to combine potatoes, cheese, salt, pepper, and corn starch. Preheat oven to 425 degrees and grease parchment papered pan. Scoop up about 1 tbsp of potato mixture and roll into cylinder and place on pan until all are made. Bake about 25 minutes, turning about 15 minutes into cooking time, until golden brown. Enjoy!
