Lemon Cream Pie Recipe

6 T cornstarch
1/4 tsp salt
1 C sugar
2 C water
3 egg yolks
2 T butter
2 tsp grated lemon rind
5 T lemon juice

1. Mix cornstarch, salt, 1/2 C sugar in double boiler. Add water and cook until thick. Cover 10 minutes.

2. Add 3 beaten egg yolks, 1/2 C sugar and butter; mix and cook 2 minutes.

3. Remove from water and add lemon.

4. Top with meringue (egg whites and 6 T sugar)

5. Bake at 325 for 15 to 20 minutes.
