Creme De Menthe Pie Recipe

9 oz. crushed pineapple
1 pkg. lime jello
1/2 C sugar
1/4 t salt
8 oz. cream cheese
1 T cream
1/4 C crème de menthe
1/2 C whip cream
1 9 inch pie crust

1. Drain pineapple and reserve juice and add water to equal 1 C. Boil liquid and remove from heat
2. Add jello, sugar and salt and cool
3. Soften cream cheese with cream and CDM. Beat until light and fluffy.
4. Add cooked jello, mixing a little at a time and blending well. Chill until slightly thick.
5. Fold in whip cream and pineapple.
6. Put in pie shell and chill.
