4 eggs separated and beaten
5 T lemon juice
rind of 1 lemon
1/2 C sugar
1/2 T gelatin
1/3 C cold water
1/3 C sugar added to egg whites

Directions:
Directions:
Combine gelatin and water and set aside.

Cook remaining ingredients until it boils. Boil 1 minute. Remove from heat. Add soft gelatin and cool.

When partially set, beat until smooth. Fold into 4 egg whites beaten with 1/4 tsp. cream of tartar and 1/3 C sugar.
