Coated Pecans


Ingredients:

1 pound of pecan halves
1 egg white
1 tsp cold water
1 cup sugar1/2 tsp salt
1tsp cinnamon

Directions:

Beat egg white with water until frothy. Add the pecans and mix.
In a bowl, mix together the sugar, salt and cinnamon.
Add to nuts and mix thoroughly
Spread on greased jelly roll pan
Bake at 225º fir ice germ stirring evert 15 minutes.
Store in air-tight container
 

Spicy candied pecans


Ingredients:

2 cups pecan halves
1/2 tsp salt
1/4 tsp ground red pepper
3/4 cups sugar
1/4 cup water

Directions:

Spread the pecans on a rimmed cookie sheet and toast them at 350 degrees until darken slightly and give off a toasty scent, 5-8 minutes.
Taste one to test the crispness and bake a minute more if needed.
Toss nuts into a bowl. Season with salt and red pepper.
Line the baking sheet with parchment paper.

In a medium saucepan, stir sugar and water together. Heat to a boil. Let simmer without stirring until syrup starts to color (3 minutes) Reduce heat to medium-low , stir to a light, even brown color, 1 minutes.

Pour in the seasoned nuts. Stir until completely coated with caramel, 1 minute.
Scrape onto the parchment-lined baking sheet. Spread a best you can. Cool completely, 20 minutes.
Beak apart the candied nuts. These addictive nuts are wonderful added to a mixed salad or served with cocktails.
 

Dave's Coated Pecans

1/3 cup sour cream
1 & 1/2 cups sugar
2 tsp vanilla
2 lbs pecan halves

Directions:

Bring the sour cream, sugar and vanilla to a boil for 1 minute.
Let it sit off the burner for 3 minutes.
Pour in the pecan halves. Stir to coat the nuts well.
Spread on aluminum foil to cool.

Store in an air-tight container.

These three different ways of making coated pecans are all delicious and the results can be used a number of ways, except that they are addictive, so will not last long on the shelf.
