3 strips of smokes bacon, diced
3 large sweet potatoes
1 sweet onion, diced2 Bell peppers, red and green, diced
2 tbsp unsalted butter
2 tbsp Maple syrup
Salt and Pepper tp taste

Directions:
Directions:
Preheat oven to 400

Peel and dice sweet potatoes and onions: dice peppers and bacon. Preheat large saute pan until very hot; add bacon and fry crisp. Add onions and sweet potatoes. Saute 5 minutes.
Add peppers and toss, cooking for 5 minutes more. Use butter to coat a large baking dish. Toss maple syrup over potato mixture and spread evenly in baking pan. Bake until potatoes are soft and slightly browned.(30-45 minutes-check often) Adjust seasoning with salt and pepper
