4 cans sliced beets
2 1/2 c. White vinegar
2 c. Sugar
3 T. picking spice
1 T. Lemon juice
1 tsp dry mustard
1 Bay leaf

Directions:
Directions:
Drain beets, reserve juice. Combine beet juice with vinegar, sugar, picking spice, lemon juice, dry mustard and bay leaf in a large pan. Stir to dissolve and bring to boil. Add drained beets and simmer for 10 minutes. Cool to room temperature. Put into large jar or 4 pint jars and refrigerate until needed.
