1/2 cup heavy cream
1/2 tsp. diced/seeded jalapeņo
2 T olive oil, divided
1/2 tsp salt
1/3 cup diced red pepper
1/3 cup diced yellow pepper
1/4 diced red onion
2 tsp. chopped chives
2 tsp. chopped dill
2 tsp. chopped parsley
1 tsp. thyme
1/8 tsp ground red pepper
1 egg slightly beaten
2 cups breadcrumbs
3/4 pound crabmeat

Directions:

In a saucepan boil cream and jalapeņo until reduced by half. In skillet add 1 T olive oil. Add peppers and onions and cook 5-7 minutes. Place veggies in bowl, add cream mixture, chives, dill, parsley, thyme, salt, and ground red pepper. Mix well. Add egg and 1/4 cup bread crumbs. Add crab meat and stir. Form patties, dip in crumbs and refrigerate 2-3 hours before cooking.
