6 or 7 ripe plum tomatoes
2 cloves garlic, minced
1 Tbsp. extra virgin olive oil
1 tsp. balsamic vinegar
6-8 fresh basil leaves, chopped
Salt and freshly ground black pepper to taste

1 baguette French bread or similar loaf
1/4 cup olive oil

Directions:
Prepare tomatoes first. Parboil the tomatoes for one minute in boiling water that has hust been removed from the burner. Drain. Using sharp small knife, remove the skins of the tomatoes. When peeled, cut in halves or quarters to remove the seeds and juice from centers. Roma tomatoes have thick skins and are perfect for this recipe.

Turn oven to 450.

While the oven is heating, chop up the tomatoes, finely. Put tomatoes, garlic, 1 Tbsp. virgin olive oil, vinegar in a bowl and mix. Add the chopped basil. Add salt and pepper to taste.

Slice baguette diagonally into 1/2" thick slices. Coat 1 side of each slice with olive oil and place on a cooking sheet, olive oil side down. Place tray of bread slices in oven on top rack, toast for 5-6 minutes, until bread is golden brown.

To serve, place bread on serving platter, olive oil side up. Spoon on bread to serve or serve in a bowl alongside.
