Chicken and Broccoli Crepes Recipe

1 egg
1 cup milk
1 Tbsp butter
1 cup flour

1 cup chicken, cooked and finely diced
1 cups broccoli, finely chopped
1 can cream of chicken soup
cup saltine cracker crumbs
cup grated parmesan cheese
cup onions, chopped

Crepes: Beat all ingredients until smooth. Lightly grease skillet. Heat, then pour 2 Tbsp crepe batter into skillet, lift pan and tilt from side to side until batter covers bottom, return to heat, brown one side only and this is your crepe. Repeat until you have enough crepes for your meal.

Filling: Mix chicken, broccoli, half of the soup, cracker crumbs, cheese and onions. Spoon a heaping Tbsp. of filling on the unbrowned side of crepe, roll and arrange sealed side down in greased baking pan. Repeat for all crepes. Combine remaining soup with 1 cup of milk; pour over crepes. Bake at 350 for 30 minutes.
