2 cups macaroni
1/2 cups flour
1 tsp. salt
1/2 tsp. dry mustard
1/4 tsp. pepper
4 TBL butter
3 cups milk
3/4 lb shredded cheddar (3 cups)
2 TBL minced onion
1 tsp. Worcestershire sauce
1/2 can tomato paste
bread crumbs

Boil/drain macaroni. In large pot melt butter, blend in flour, mustard, salt and pepper. Slowly stir in milk and tomato paste. Cook over low heat, stirring until thickened. Add cheddar, onion, and Worcestershire sauce. Heat until cheese melts. Add macaroni, mix well. Pour into 1 quart dish, top with bread crumbs. Bake at 350º for 30-45 minutes.

This is another recipe my mother, Frances Carrio, made for us kids. We LOVED her mac and cheese. When she made it, that was a treat. I have experimented with some different cheeses, asiago, gruyere, jack, etc. This is a very friendly recipe.
