1/4 cup butter
1 large onion
1 cup celery
3-4 potatoes
1/4 cup parsley
1 quart chicken broth
1 quart milk
3 tsp cornstarch
1/4 cup water

Directions:
Directions:
Melt butter in a large stockpot. Add chopped onion and celery. Cook until onion softens, about ten minutes. Add potatoes, 1/4 cup parsley, 1/2 tsp salt, 1/4 tsp pepper and chicken broth. Cover and cook until potatoes are tender, about 30 minutes. Stir in milk and cook covered.
Add a pound of shrimp, deveined and shelled, crabmeat, and/or scallops. Whatever you like to eat. Let shrimp cook several minutes.
Mix cornstarch and water, add into the soup and stir about five minutes, until thickened. Serve with crust bread and salad.
