Lemon Meringue Pie Recipe

1 cup granulated sugar
6 Tbsp flour
tsp salt
2 egg yolks
1 lemon, grated rind and juice
2 cups boiling water
1 Tbsp butter
Baked pie shell
2 egg whites
2-3 Tbsp fine granulated sugar

Mix sugar, flour and salt together.
Beat egg yolks until creamy and add lemon juice and rind.
Stir in the flour mixture and mix until smooth then add boiling water gradually and cook in a double boiler for 10 minutes or until thickened.
Add butter and stir until melted, then pour into baked pie shell.
Make a meringue of the egg whites and sugar and pile lightly on the pie.
Bake in oven at 300F for 12-15 minutes or until meringue is delicately brown. Cool at room temperature.
