2 cups flour
3 eggs
2 teaspoons sugar
1 teaspoon baking powder
1 teaspoon salt
1 teaspoon baking soda

Cheese and applesauce for filling or cinnamon and sugar for rolling

Directions:
Directions:
Beat egg whites. Set aside. Beat egg yolks. Add sugar, salt, and milk. Add dry ingredients - flour, salt, baking powder, baking soda. Fold in egg whites.

Cook in special Evelskiver Pan. Put 1 T batter. Add a chunk of cheese or spoon of applesauce to the middle. Then top with 1 teaspoon more of batter. Or instead you can cook them plain and roll in cinnamon and sugar or top with syrup.
