Kathleen Ellinger

3 large sweet potatoes
4 Tbsp. butter
2 eggs
⅓ cup evaporated milk
1 tsp. vanilla
cup sugar

⅓ cup butter, melted
1 cup brown sugar
cup flour
1 cup chopped pecans

Cook sweet potatoes in oven until soft. Once they are partially cooled, scoop into a large bowl. Into the same bowl add the butter, eggs, evaporated milk, vanilla and sugar. Blend with a mixer until the mixture is combined and smooth (there will be some lumps). Put mixture into a casserole dish. Combine the topping ingredients and mix together until coarse and crumbly. Put the crumb mixture evenly over the top of the sweet potatoes. Bake in a 350 oven until the topping is lightly browned and the sweet potatoes are hot, about 30 minutes.
