4 medium russet potato
1 red onion, diced
4 cloves garlic, minced
4 cups frozen chopped spinach, thawed (or 1 lb fresh spinach)
2 tsp greek seasoning
1/3 cup cream cheese (or cashew cream cheese)
1 cup feta cheese
salt and pepper to taste

Directions:
Preheat the oven to 400. Pierce potatoes and bake in oven for an hour. While potatoes are baking, add a drizzle of oil to a pan and cook the onions until soft, about 3-4 min. Add spinach, greek seasoning, and garlic and cook until heated through, about 4 min. Reduce oven temp to 375. Cut potatoes open and scoop out insides. Add to a bowl with cream cheese and season with salt and pepper and mash with a potato masher. Stir in spinach mixture and feta. Stuff each potato skin with filling and bake for 25 min.
