2-1/4 cups water
1 cup wheat berries
Smoked turkey (1/2 lb.), diced
2 nectarines, pitted and cut into 1/2 inch pieces
1 Granny Smith apple, peeled, cored and diced
1/2 red onion, finely chopped
1/4 cup orange juice
3 T cider vinegar
1 T Dijon mustard
1 T honey
1/ bag (10 oz) baby spinach, coarsely chopped

1. Bring water to boil in medium saucepan. Stir in wheat berries, reduce heat, cover and simmer for 1-1/2 to 2 hours, until berries are tender and water is absorbed. Fluff berries with fork; let stand for at least 5 minutes.
2. Mix together berries, turkey, fruit and onion in a large bowl.
3. Make dressing, whisk together all ingredients in a small bowl until blended. Drizzle dressing over mixture.
4. Line serving platter with spinach and put mixture on top.
