1 lb. Multi colored small potatoes (purple a must)
Handful of fresh mint
Handful of fresh basil
Handful of fresh chives
Handful of fresh parsley
1 small shallot
1 T grainy mustard
1/8 cup white Balsamic vinegar
1/8 cup of good olive oil
Sea salt

Directions:
Directions:
In a big bowl, put a Tablespoon of grainy mustard, vinegar and olive oil and whisk to emulsify. Add 1 small chopped shallot and set aside.

Boil potatoes until tender (about 22 minutes). While the potatoes are still warm, sliced them lengthwise and add to the dressing.

Chop fresh herbs and sprinkle over potatoes. Lightly toss and season with sea salt.
