2 cups brown sugar
1 (15oz) can pumpkin
3/4 cup oil
2 teaspoons vanilla
Dash of salt
2 teaspoons baking soda
4 cups flour
2 teaspoons baking powder
1 teaspoon cinnamon
1 teaspoon Nutmeg
1/2 teaspoon Ginger
1 cup mini chocolate chips

Optional Glaze:
1 cup powdered sugar
2 tablespoons milk
dash of cinnamon (to taste)

Cookies:
Preheat oven to 350º F. In large mixing bowl, combine first five ingredients. Mix on low speed to blend. Add remaining ingredients. Use cookie scoop to measure cookie dough onto lightly greased cookie sheet. Bake 12 to 13 minutes.

Optional Glaze:

Mix to blend. Pour into baggy and snip corner to drizzle glaze on cooled cookies. Add more powdered sugar for a thicker glaze.
