3 SLICES BACON, COOKED UNTIL CRISP, DRAINED AND CRUMBLED
3 TABLESPOONS OLIVE OIL
2 TABLESPOONS WHITE WINE VINEGAR
1 SMALL ONION, MINCED
CUP DICED COOKED CHICKEN
TEASPOON EACH SALT & PEPPER
1/2 CUP MINCED FRESH PARSLEY
3 TABLESPOONS MINCED CRYSTALLIZED GINGER
2 TABLESPOONS WALNUTS
1 TABLESPOON CHOPPED CILANTRO
3 TABLESPOONS MANGO CHUTNEY

PLACE THE BEANS IN A SALAD BOWL AND ADD THE REMAINING INGREDIENTS.

TOSS GENTLY TO COMBINE. CHILL, COVERED FOR 1 HOUR. TOSS AGAIN AND SERVE.
