Rhubarb Cake Recipe

2 cups flour
1 teaspoon baking soda
1 teaspoon baking powder
1/4 cup salt
1 1/2 cups brown sugar
1/2 cup margarine
1 egg
1 cup milk,
1 teaspoon vanilla
2 1/2 cups rhubarb cut in 1 inch pieces.
1 tsp cinnamon mixed with 1/2 cup white sugar

1. Combine Flour, baking soda, baking powder and salt. Set aside.

2. In large bowl beat brown sugar and margarine until fluffy.

3. Beat in egg

4. Then add part of flour mixture alternating with milk until well blended.

3. Stir in vanilla and rhubarb.

4. Turn into greased 9 x 13 pan. Sprinkle with sugar and cinnamon.

5. Bake at 350 for 40 minutes or until done.
