1 head cauliflower
2 large eggs
1/2 cup cheddar cheese grated
1/2 cup panko
1/2 teaspoon cayenne pepper (more or less to taste)
salt
olive oil

Directions:
Directions:
1. Cut cauliflower into florets and cook in boiling water until tender about 10 minutes. Drain.

2. Mash the cauliflower while still warm.

3. Stir in cheese, eggs, panko, cayenne and salt to taste.

4. Coat the bottom of a griddle or skillet with olive oil over medium high heat.

5. Form the cauliflower mixture into patties about 3 inches across.

6. Cook until gold brown and set, about 3 minutes per side. Keep each batch warm in the over while you cook the rest.

If you have a really good nonstick pan don't use the olive oil at all.
