1 lb. red potatoes (scrubbed)
4 cups hot water
2 Tbsp. cider vinegar
2 Tbsp. sugar
1/2 tsp. ground pepper
1 large onion cut into quarters
2 lbs. corned beef brisket (with spices)
8 small whole potatoes (scrubbed and cut into quarters)
1 head of cabbage (corned and cut into 10 wedges (about 1-1/2 lbs)
4-5 carrots cut into 1" pieces

Directions:
Directions:
Combine water, vinegar, sugar, pepper and onions in 6 qt. crock pot.
Place corned beef and spice packet into mixture.
Scatter potatoes on top and along sides.
Cover and cook on high for 4 hours.
Remove lid and scatter cabbage over the top. Cover and continue cooking on high for 3-4 hours more or until beef is tender.
