Boneless, skinless chicken breasts

Salt and pepper

Other spices and seasonings

Parchment paper

Preheat oven to 400º

Rub pan and one side of parchment paper with olive oil

Rinse chicken and pat dry. Rub with butter or olive oil if desired. Sprinkle with salt, pepper and seasonings .

Place chicken in pan. lay the parchment paper, olive side down, over the chicken. Tuck the edges into the pan and press parchment paper down so it is snug against the chicken. The chicken breasts should be completely covered.

Bake until the chicken reaches 165º Start checking after 20 minutes. Total cooking time is usually 30 to 40 minutes.

Can be refrigerated for up to 1 week.
