Gran Stewart's Crab Cakes Recipe

Ingredients: l lb. crabmeat 2 sticks of celery ½ onion 1 Tbsp. mayo salt and peper milk 2 slices of white bread (soak the bread in the milk)

Directions:Open can of crab meat. Go thru crab mea. Make sure there are no bones.(they are very, very small). Cut up celery, onion very, very small. Use the flower off the celery stalk. Add to crab meat. Add the soaked bread to crab meat. (not the leftover milk) Add 1 BIG spoonful of mayo to crab meat mixture (this will hold the crab meat together). Mix all together. Shape into football shape (not round, but like 3 inches long). Crab meat should make about 10 crab cakes depending how big you made the crab cakes. Use 2 bowls: 1 for breadcrumbs and 1for beaten egg and milk (egg wash). Roll each crab cake into egg wash, then into breadcrumbs. Use large skillet (frying pan) with oil. Put crab cakes in gently (they tend to break apart). Brown each side & put on cookie sheet. Bake for 30 minutes at 350º . Place on paper towel to get rid of excess oil.
Serve with cocktail sauce: (½ cup of ketchup and 1 tsp. of horseradish) or buy already made. |

Notes: Gran Stewart(Vera) would make these crab cakes for Lilly and I for our Birthday Dinner (we didn't know that the crab meat would be on sale due to Lent). That was the only time Gran would make these crab cakes. We still tell Aunt Pat to make them for us for our birthday dinner.
