1 Head Escarole, washed well to remove all sand
1 8oz can Chicken Broth
1 can Cannoli Beans
1 tsp Olive Oil
Salt & Pepper to taste

Directions:
Directions:
Put escarole in a pot and cover with water.
Add broth and oil.
Bring to a boil and lower heat to simmer.
Add beans, salt & pepper.
Cook until escarole is tender, about 10 minutes.

May serve with juice as a kind of soup with Italian bread, or scoop and serve without liquid as a side dish.
