At the end of the season or if you have way too many tomatoes to eat fresh you can simply freeze them. Remove stems, wash and dry thoroughly. You can blanch them to remove the skins, if you want. Place in Ziploc bag and freeze. No other processing necessary. Frozen tomatoes can be used in any tomato dish that you would normally use canned.

Works really well in Spaghetti sauces, just throw the frozen tomatoes in to simmer for a garden fresh flavor.
