1 medium white or yellow onion
6 Tbsp. butter
two 14.5 oz. cans diced tomatoes
two 64 oz. bottles tomato juice
6 Tbsp. sugar
2 Tbsp. chicken base (or 3 chicken bouillon cubes)
freshly ground black pepper
1 c. sherry
1½ c. heavy cream
¼ tsp. chopped basil
¼ tsp. chopped parsley

Directions:
Directions:
Dice onion. Melt butter in large pot or dutch oven. Add onion and cook until translucent. Add diced tomatoes and stir to combine. Add tomato juice. Add sugar, chicken base, and pepper. Stir to combine, and heat almost to a boil. Turn off heat. Add sherry and heavy cream. Blend or purée all ingredients. Add parsley and basil. Serve warm.
