1/3 c. canned pumpkin
3 T. liquid egg substitute (or 1 large egg, beaten)
2 T. non-fat half-and-half
2 T. granulated sweetener
1 tsp. brown sugar
1/2 tsp. pumpkin pie seasoning
1/2 tsp. vanilla extract
light whipped topping (optional)

Directions:

In a 1-cup or larger microwave-safe bowl, whisk together all of the ingredients. Place in the microwave and cook on high for 2 minutes. (The center may appear a little wet, but the rest of the custard should be almost fully set. It will continue to cook slightly more upon cooling.)
Serve warm or cold with a whipped topping, if desired.
