1 medium potato
2 tbsp. butter
1 medium carrot finely chopped
1/4 c chopped onion
1/4 c chopped celery
2 tbsp. chopped parsley (optional)
pinch thyme
1/2 lb lean ground beef or ground mutton
1/2 c beef stock (can be made with beef cube)
salt and pepper
1 1/2 tsp butter

Heat oven to 375ºF for 20 to 25 min. Scrub potato but do not peel. Boil until firm. Rinse with cold water and set aside. In a skillet heat 2 tbsp. butter. Add carrot, onion, celery and cook for approximately five min. Add pinch thyme and transfer to small casserole dish. Increase heat to medium high. Cook ground beef in skillet until evenly browned. Stir in beef stock, season lightly with salt and pepper. Cut potato crosswise in 1/4" slices and arrange over meat mixture. Dot with 1 1/2 tsp butter. Recipe can be halved for one person using small potato and carrot or doubled for 4 servings. Onion soup dishes ideal for individual servings.
