1 yellow onion, diced
1 lb ground beef or turkey
1 package (10 oz) frozen chopped spinach
2 cans (4.5 oz) mushrooms, drained
salt and pepper to taste
grated Parmesan cheese
4 eggs

Directions:
Directions:
Brown meat and onion together, drain any fat.
Make "hole" in center of meat/onion mixture, place frozen spinach in it and add mushrooms and a generous sprinkling of Parmesan cheese.
Turn heat to low and cover pan.
As spinach starts to thaw, break it up with a spatula so it will cook faster.
Once spinach is cooked, mix everything in pan together then break eggs in pan and stir as if scrambling eggs.
When eggs are set, salt and pepper to taste and serve with more Parmesan cheese.
