1 T. soda 1 cup buttermilk
2 tsp. baking powder 1/2 tsp. salt 2 tsp. vanilla 6 1/2 cups flour

Directions: |
Directions:Cream shortening, sugar and eggs. Add the 1 T. soda to the cup of buttermilk (make sure it is in a large enough container to grow!), mix until fluffy and add to creamed mixture. Mix: baking powder, salt, vanilla and flour. Slowly add to cookie mixture. Chill several hours.
Sprinkle flour on a cutting sheet or counter and roll and cut out dough. Place on greased cookie sheet. Bake at 350º for 10-12 minutes.
*Watch cookies carefully, I usually only bake for 7-8 minutes so they are soft and chewy like Grandma Benson's cookies she use to keep in her "cookie drawer!." YUM! |

Notes: I LOVED going to Grandma Benson's farm and can still remember getting cookies out of her drawer in the kitchen. The taste of those cookies were unforgettable, at least to me! I kept asking for the recipe but nobody seemed to have it. Then, magically, my good friend in college made some cookies and my first bite was like a HUGE awakening to my mouth, it was Grandma Benson's cookies! I asked her for the recipe and she said she would have to get permission because it was a coveted recipe for her family. She did end up giving it to me and very carefully showed me how to mix up the buttermilk and soda to make it 'grow' so I would not mess up the recipe! These cookies are definitely a favorite for our family, I hope you enjoy them as much as we do. And for those who remember Grandma Benson's cookies, I hope it brings back the same memories for you that it does for me!
